One potato, two potato

Sometimes things don’t go as planned. You have an idea and you know what you want, but you just can’t quite get there. I had past due white creamer potatoes. They has tiny eyes budding. They couldn’t be used for dinner, but I didn’t want to waste them. But, I couldn’t find that recipe I used to make potato bread back in June. Those loaves turned out like this:

After searching and Googling and going through Epicurious, I remembered “old school”. I went to my cookbooks. The recipe is in the Baking with Julia: Rustic Potato Loaves. The recipe will make two loaves. But, I ended up with a cobbly, knobbly biscuit like bread reminiscent of something my mother made called Butterdips. Warm from the oven, slathered with butter, the bread was awesome. But, like biscuits, it didn’t keep well. Get it while it’s hot and eat it all.

The funny thing is that one day, in the future I will actually want to remake the cobbly, knobbly potato biscuit bread and that fluke of an outcome will never occur in the universe again.
